Roll over: Dry and nutty. The perfect aperitif

This is a pale and golden Sherry with delicate almond aromas. Light on the palate and slightly salty due to the aging cellars being located on the pier at El Puerto de Santa Maria. This wine is aged for 3+ years under flor or flower yeast.

One of the most famous categories of Sherry and is made with the help of flor – a kind of yeast that covers the maturing wine, giving it the idiosyncratic flavour that it possesses.

Roll over: All the Amen Break wines are made with minimal winemaker intervention and a healthy dose of soul.

Amen Break are by brothers Matt and Steve Harrop.

We work with the rhythm of each vintage to find fruit that best expresses the season. Our Pinot Noir was grown at Zebra Vineyard on the northern elevations of the Bendigo area in Central Otago.

All the Amen Break wines are made with minimal winemaker intervention and a healthy dose of soul. To that we say Amen, Brother.

The Amen Break is a legendary six second, four bar drum solo performed by Gregory Sylvester “G. C.”. Coleman in the song “Amen, Brother” performed by the 1960s funk and soul outfit The Winstons.

The Amen Break has become the most sampled drum beat in musical history. It is considered the foundation rhythmic beat for the much of the electronic musical genre (Trip Hop, Drum ’n Bass, Jungle, Psych Trance etc.) that exploded in the late 80’s and early 90s of last century.

Roll over: Aromatic and Floral - a Pinot Gris for grownups.

"A textural delight, with powerful, delicious aromas and flavours of ripe apple, Nashi pear, touches of honeysuckle. This is a truly aromatic expression of Pinot Gris and a marvelous food wine." - Prophet's Rock

The 2022 Pinot Gris is fabulously dry and textural, with crushed rocks, white flowers, hints of nashi pear (and pear drops), white tea and brine in the mouth. The wine flows seamlessly from start to finish and is a complex but silky rendition of the variety. It makes sense that Winemaker Paul Pujol has a good sense of the variety, having worked in Alsace at Maison Kuentz-Bas for three years prior to coming to Prophet's Rock. Fully matured in old oak, the wine is fresh but also very long and lingering—a sure sign that it has a long future in front of it. 14% alcohol, sealed under Diam. 94 Robert Parker.com

Intense, well-directed aromas are staunch, woody and suggest turpentine before pulling back. A lemony palate is loaded with citric acidity, which creates an electric mouthfeel. Nutty, citric and zesty on the finish, this is a superb artisan fino with a high level of complexity.

It's ready to drink now or in the next two to three years. Serve lightly chilled, ideally with dried jamón.

French master winemaker Ludwig Vanneron believes the Chardonnay fruit grown in New Zealand is no different to Burgundy, it’s the understanding of terroir and the consistent effort of vine caring that is required. LVCA are looking for flavour concentration with fully ripen grape condition giving a perfect level of phenolic compounds. The fruit is grown in Maraekakaho (a small appellation of Hawkes Bay), being more inland with cooler allows extra time to hang the fruit to reach its full ripeness slowly helping to retain good acidity. Clone B95 is 100% fully fermented in tight-grained French barrels between 10-12 months with occasionally bâttonage. The result with an astonishing pleasant nose of yellow lily and popcorn, with succulent golden peach and tangerine, the rich creamy texture coating bright stone -fruit buttery taste which leaves memorable experience like their brother, Petit Frere.

Roll over: There is a saying that once you start to fall under wine's spell, that all roads will lead you to Burgundy.

Dominique Lafon was the first Côte d'Or superstar to expand his holdings into the Mâconnais followed by Domaine Leflaive. They have breathed new life and prestige into this cooperative dominated region. Les Héritieres du Comte Lafon produces wines ranging from generic Mâcon up to four single-vineyard wines. With the same biodynamic techniques as used in his Meursault domaine, Lafon has crafted a range of delicious wines that show the regions true potential.

The entry-level wine from Lafon’s Mâconnais operation offers spectacular value. The bottling includes grapes from Viré-Clessé, Uchizy, Viré, Chardonnay and Bussières, including grapes declassified from single-vineyard sites. The grapes are pressed as whole clusters and fermented in large, upright wooden foudres before ageing for six months. Although the wine in 2022 did not have a lot of malic acid, it still has a lovely freshness and equilibrium. 92 points Decanter

"Henriot is a Champagne house for insiders – it does fly under the radar but produces exquisite Champagnes. For over 210 years the Henriot family has symbolised an innovative approach and has remained independent. This chardonnay dominant Champagne house incorporates an exceptionally high proportion of Premiers and Grands Crus in its cuvées, which come from the best Chardonnay parcels. Producing only 1.3 million bottles a year, this family owned house features a long-aging style and a focus on Chardonnay. Says 8th generation managing director, Thomas Henriot: "I do not like wines that go in strange directions. I like to know where we are and where we are going. Full malolactic fermentation provides soft structures, with dosages between 6 and 11 g/L." Tyson Stelzer, The Champagne Guide

"Henriot in general aims for understated wines and like the regular Souverain, this is has a distinct yeast component but it's more restrained than the vast majority of examples in this review. The reserved nose features notes of green apple and white rose with the aforementioned yeast present only as a nuance that leads to crisp, refined and very pure flavors that offer both excellent cut and fine detail. It will also age extremely well and for my taste, I would allow it another 2 to 3 years first as it will repay your patience amply. Lovely juice." Burghound 92/100
